The History of Domaine Joannes Violot-Guillemard

Domaine Violot-Guillemard, based in Pommard is a historic estate in Burgundy, particularly in the Côte de Beaune. Today, Joannes is at the helm of the estate. He arrived in 2014 and took over the wine production a few years later, succeeding his father, Thierry Violot-Guillemard.

Viticulture and Vinification: The Estate's Philosophy

In the vineyard, the goal is to preserve biodiversity and soil quality, notably by limiting plowing to help the vines produce the best possible grapes. The estate has been working according to organic farming methods since 1999 but only obtained certification in 2014. The vineyard consists of high-quality terroir, composed of clay-limestone soils that highlight the finesse of Chardonnay and Pinot Noir. In the cellar, vinification is geared towards bringing elegance to the wines. Joannes practices traditional vinification, using indigenous yeasts and favoring relatively long aging periods (16 to 20 months).

Domaine Joannes Violot-Guillemard produces several prestigious appellations from the Côte de Beaune, such as Pommard Premier Cru "Les Epenots" and "Les Rugiens," as well as the monopole Pommard 1er Cru Monopole "Derrière Saint-Jean". For white wines, the estate offers an excellent Meursault "Les Meix Chavaux" and a Beaune 1er Cru "Clos des Mouches" focused on elegance.
