The History of Domaine Camille et Guillaume Boillot

Domaine Camille et Guillaume Boillot is a family project initiated in 2019 by Guillaume Boillot and his wife Camille. Guillaume, son of Henri Boillot, has been responsible for the vinification of red wines and the management of the vineyards at the family estate Henri Boillot since 2008. Camille represents the fifth generation of a winemaking family, her father Christophe Violot-Guillemard runs the eponymous estate located in Pommard.

Viticulture and Vinification : The Estate's Philosophy

In the vineyard, the estate adopts a respectful approach to the vine and biodiversity. In the cellar, the wines are aged in oak barrels, but the estate ensures that the influence of the wood in the wines is minimized. For red wines, Camille and Guillaume apply the principle of whole-cluster vinification, which promotes a gentler extraction as well as precise aromas.

Camille and Guillaume Boillot produce a majority of white wines from the Côte de Beaune, such as a Meursault Premier Cru "Les Charmes" and a Puligny-Montrachet "Les Enseignères".
