The Domaine Camille et Guillaume Boillot is a family estate founded in 2021 by Guillaume Boillot and his wife Camille. After working alongside his father at the renowned Henri Boillot estate, Guillaume decided to embark on this ambitious new venture with his wife. Camille represents the fifth generation of a family of winegrowers. Her father, Christophe Violot-Guillemard, manages the family estate located in Pommard.

Viticulture and Winemaking: The Estate's Philosophy

In the vineyards, the estate follows a sustainable approach that respects both the vines and biodiversity. Camille and Guillaume practice sustainable viticulture. In the cellar, the wines are aged in oak barrels, while great care is taken to ensure that the influence of the oak remains subtle. For their red wines, Camille and Guillaume use the principle of whole-barrel fermentation (vinification intégrale), which promotes gentler extraction and enhances the precision and purity of the aromas.
