Located in Savigny-lès-Beaune, in the heart of the Côte de Beaune, the Guillemot family estate has upheld a winemaking tradition spanning several generations. Today, Pierre Guillemot represents this new generation of Burgundian winemakers, continuing the family legacy while bringing a contemporary vision to his craft. Passionate and deeply connected to his terroir, he is committed to preserving the identity of the wines produced from the estate’s historic parcels.
The estate covers approximately 10 hectares of vineyards, primarily planted with Pinot Noir, the emblematic grape variety of Burgundy, complemented by smaller plots of Chardonnay and Aligoté. The vineyards are mainly located around Savigny-lès-Beaune and on several prestigious terroirs of the Côte de Beaune, offering a remarkable diversity of climats and expressions of terroir.
In the vineyard, Pierre Guillemot adopts a precise and respectful approach to each parcel, aiming to reveal the full character of Burgundy’s terroirs. The grapes are generally hand-harvested, ensuring rigorous selection and optimal fruit quality.
In the cellar, winemaking remains faithful to Burgundian tradition, with a low-intervention philosophy. The objective is to preserve both the expression of the fruit and the typicity of each climat. Aging in oak barrels is carried out with precision, bringing structure and complexity without overshadowing the wine’s identity. This approach results in wines that are balanced, elegant, and capable of excellent aging potential.
The estate’s production is predominantly composed of red wines from Pinot Noir, particularly from the Savigny-lès-Beaune appellation and several Premier Crus such as Aux Serpentières, Les Narbantons, and Les Jarrons. The estate also produces a selection of Corton Grand Cru wines, as well as white wines made from Chardonnay.
The wines stand out for their finesse, balance, and aromatic precision, offering elegant profiles marked by red fruit and spice aromas, along with impressive depth on the palate, hallmarks of the great terroirs of the Côte de Beaune.
