History and Terroir

Domaine Lamy-Caillat is a micro-estate located in Chassagne-Montrachet, entirely dedicated to the production of great white wines. 

Founded in 2011, it came into being when Sébastien Caillat and Florence Lamy took over several plots entrusted to them by a neighbor wishing to keep his vines in careful hands. 

The estate covers approximately 1.2 hectares.

Florence Lamy comes from the Lamy family (of Domaine Lamy-Pillot), and together with Sébastien Caillat, they aim to produce more artisanal white wines, carefully crafted, with an almost minimalist approach to intervention.

Viticulture and Vinification – The Philosophy of the Estate

At Domaine Lamy-Caillat, every detail matters. The vines are cultivated with respect for nature, using practices close to sustainable or even organic viticulture.

Vinification is deliberately traditional and non-intrusive. After being pressed in a traditional mechanical press, the juices ferment directly, then are aged on the lees.

Aging is long and patient: the wines remain in barrels for about a year without bâtonnage, then spend an additional year in tanks on the lees with a single bâtonnage, before undergoing natural clarification and being bottled directly from the barrels, often without filtration. Malolactic fermentation is deliberately delayed, thanks in part to the coolness of the cellar, which helps preserve freshness and tension in the wines.

The Wines of the Domaine

Domaine Lamy-Caillat produces exclusively white wines, mainly from Chassagne-Montrachet and some wines from its neighboring villages. Here are three of the most famous appellations they cultivate:

- Chassagne-Montrachet 1er Cru « Les Caillerets »: a famous plot with marl-limestone soil, favorably exposed.

- Chassagne-Montrachet 1er Cru « La Romanée »: vineyard with thin soil on hillside, refined expression.

- Chassagne-Montrachet Village: more accessible cuvée, often from the place called « Pot Bois » located above Caillerets.

Other vintages of the estate include a White Burgundy, from vines located at the foot of Chassagne (clay-clay soils) and also a Saint-Aubin « En l'Ebaupin » vintage, from more recent vines planted in 2015.

Lamy-Caillat wines are renowned for their aromatic purity, their intensity, their great finesse, and a significant aging potential despite the small volumes produced.
